Barbeque Chicken Pizza

Sunday, May 6, 2007

1 pre-baked packaged pizza crust
1/2 bottle good spicy BBQ sauce
1 cup cooked chicken, cubed
1/2 sweet onion, sliced or Durkee onion rings
2 cups cheddar cheese
Jalapeno slices, to taste (mild or hot or none at all)

Preheat oven to 450 degrees. Unwrap the pizza crust and place directly on the oven rack for 5 - 10 minutes to warm and make it browner.

Spray a non-stick pan with cooking spray or use a little olive oil. Add the onions and chicken. Cook until golden brown. Add a little of the BBQ sauce to coat.

Remove the pizza crust from the oven and place on a pizza pan or cookie sheet. Spread the BBQ sauce over the crust leaving a 1/2" edge. Sprinkle chicken and onion mixture over the sauce. Sprinkle the cheese on next. Dot with jalapeno slices. Reduce oven temp to 400 degrees. Cook pizza for 6 - 12 minutes until cheese is bubbly and starting to brown.
