Even though it's the day after Cinco de Mayo, doesn't mean it's too late to make a batch of salsa. Here's my own concoction made with canned tomatoes. If you're lucky enough to have lots of fresh ones, this will be even better.
Salsa
1 28 oz can diced tomatoes drained
Diced sweet onion
Finely chopped jalapeno
Cilantro
1/2 tsp salt
1/2 tsp sugar
Juice of half a lime
Drain some of the juice from tomatoes. Add the remainder of ingredients. Chill 3-4 hours. Serve with tortilla chips. This is almost as good as that made with fresh garden tomatoes, but takes only minutes to make.
