This is my version of one I found on http://www.allrecipes.com/ .
3 cups cooked rice, chilled
1 can rinsed & drained black beans
1 large tomato seeded & diced
3/4 cup shredded cheddar
1/3 c vegetable oil
1+ tsp hot chili oil
1/4 c dill flavor vinegar or regular vinegar
1 pkt of equal or 1 tsp sugar
1 T lime juice
1 T chopped cilantro
salt and pepper to taste

In a large bowl, mix together rice, beans, tomato, cheese and cilantro.
In a small bowl, whisk together oils, vinegar, sugar, lime juice and salt & pepper. Cover and refrigerate for at least 30 minutes.
