MR FOOD: Zucchini Squares

From MR FOOD...I made this today and it was delicious!
(I used less oil, but made up the difference with milk. Also used whole wheat graham flour for the AP flour.)
6 to 8 servings
4 eggs
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
1/2 teaspoon seasoned salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder (see Note)
1/4 cup chopped fresh parsley or 2 tablespoons dried parsley flakes (optional)
1/2 cup vegetable oil
1/2 cup all-purpose flour
1 cup biscuit baking mix
3 cups grated zucchini


Preheat oven to 375°F. In a large bowl, beat eggs, add remaining ingredients, and mix well. Pour mixture into an ungreased 9-inch square broiler-proof baking pan; bake 30 to 35 minutes.
To brown top, place pan under the preheated broiler for the last 2 or 3 minutes. Cool for a few minutes then cut into squares.
NOTE - If you have the time, give this extra zip by using chopped fresh garlic instead of garlic powder."
